We made pancakes today for breakfast. We have not had pancakes for almost 2 years. We have had crepes, but they are different, not proper American pancakes/hotcakes/flapjacks, whatever.
Kari found a recipe on the Web and they were wonderful. Had to make them from scratch, because they don't have pancake mix here. You can buy crepe mix, but we wanted pancakes. Here is the recipe:
2 cups flour
2 tsp baking powder
1 tsp baking soda
1 tbsp sugar
1 tsp salt
1 cup plain yogurt
1 cup milk
2 eggs
1/4 cup melted butter
With a radiant smile:
Mix dry ingredients in a large bowl.
In a separate bowl, lightly beat the eggs, then add milk and yogurt and mix.
Add the goop to the dry ingredients and mix gently.
Add melted butter and mix.
Do not overmix, the batter should be slightly lumpy.
Cook and serve to your husband with love and a dash of adorance.
